Directions
Step 1
Make Crust
- Mix almond flour, shredded coconut, coconut oil, maple syrup, and salt.
- Press evenly into a parchment-lined 8×8 pan. Chill while making the filling.
Step 2
Blend Coconut Cream Layer
- In a high-speed blender, combine soaked cashews, coconut cream, maple syrup, vanilla, and melted coconut oil.
- Blend until smooth. Spread over crust and return to fridge for 30 minutes.
Step 3
Make Chocolate Layer
- Whisk cocoa powder, maple syrup, coconut oil, vanilla, and salt until smooth.
- Pour over the coconut layer and spread evenly.
Step 4
Top & Chill
- Sprinkle with chocolate chips and toasted coconut.
- Chill for at least 2 hours until firm.
Step 5
Serve
- Cut into squares and top with coconut whipped cream before serving, if desired.
