Directions
Step 1
Prepare Flax Egg
- Mix flaxseed meal and water, let sit for 5–10 minutes to thicken.
Step 2
Make the Filling
- In a bowl, combine mashed potatoes, chopped veggies, garlic, olive oil, salt, pepper, nutritional yeast, and chickpea flour. Mix until smooth but firm enough to shape.
Step 3
Shape Croquettes
- Form into small oval or ball-shaped croquettes.
Step 4
Coat
- Dip each croquette into flax egg, then roll in gluten-free breadcrumbs.
Step 5
Cook
- Air Fryer: Spray with oil and air fry at 375°F (190°C) for 12–15 minutes, flipping halfway.
- Pan Fry: Heat oil and shallow fry until golden on all sides, about 3 minutes per side.
- Oven: Bake at 400°F (205°C) for 25 minutes, flipping halfway, until crisp.
