Directions
Step 1
- Sauté Aromatics:
- Heat coconut oil in a large pot over medium heat. Add onion, garlic, and ginger. Sauté until fragrant and translucent.
Step 2
- Brown the Chicken:
- Add the chicken pieces and cook until lightly browned on all sides.
Step 3
- Add Rice & Broth:
- Stir in the rinsed rice and pour in the chicken broth. Bring to a boil.
Step 4
- Simmer to Perfection:
- Lower heat and simmer uncovered for about 30–40 minutes, stirring occasionally, until the rice breaks down and the soup thickens.
Step 5
- Season & Stir in Hemp Hearts:
- Add fish sauce or coconut aminos, salt, and pepper to taste. Stir in hemp hearts for added texture and nutrients.
Step 6
- Serve:
- Ladle into bowls and top with chopped scallions, fried garlic or shallots (if using), and a squeeze of calamansi or lemon juice.
