Directions
Step 1
- Preheat Oven:
- Preheat to 350°F (175°C). Lightly grease a 9-inch pie dish or small baking dish with coconut oil.
Step 2
- Prepare Batter:
- In a mixing bowl, whisk together eggs, coconut cream, almond milk, sweetener, vanilla, almond flour, hemp hearts, and salt until smooth and slightly frothy.
Step 3
- Add Berries:
- Spread the berries evenly across the bottom of the greased dish.
Step 4
- Pour & Bake:
- Pour the batter gently over the berries. Bake for 30–35 minutes or until the clafoutis is puffed and golden, and a knife inserted near the center comes out mostly clean.
Step 5
- Cool & Serve:
- Let cool slightly. Serve warm or chilled, optionally dusted with powdered monk fruit or with a dollop of coconut whipped cream.
