Directions
Prepare the Dough
- In a bowl, mix almond flour, tapioca flour, coconut flour, baking soda, and salt.
- Add in coconut oil, maple syrup, vanilla, and almond milk. Mix until it forms a soft, pliable dough.
- Wrap and chill in the fridge for 30 minutes.
Shape the Cookies
- Preheat oven to 350°F (175°C).
- Roll dough between two sheets of parchment paper to about ¼” thickness.
- Cut into circles using a 3-inch round cutter (or glass).
Fill and Fold
- Place 1 tsp of your chosen filling in the center of each circle.
- Fold the dough into a triangle shape by pinching three corners together, leaving a little opening in the center.
- Press edges firmly to seal.
Bake
- Place cookies on a parchment-lined baking sheet.
- Bake for 10–12 minutes, until edges are golden brown.
Cool and Serve
- Let cool on the tray for 5 minutes, then transfer to a rack. Enjoy!
