Tigernut & Hemp Oil Homemade Tortillas (Gluten-Free, Dairy-Free, Soy-Free, Paleo-Friendly)
Directions
Step 1
- Mix dry ingredients:
- In a bowl, whisk together tigernut flour, tapioca flour, and salt.
Step 2
- Add wet ingredients:
- Stir in hemp oil and warm water gradually, mixing until a soft, pliable dough forms. Add water a tablespoon at a time if too dry.
Step 3
- Rest the dough:
- Let it sit for 5–10 minutes to absorb moisture and become more workable.
Step 4
- Divide & shape:
- Divide dough into 6–8 equal balls. Roll each one between two pieces of parchment paper to about 6 inches in diameter.
Step 5
- Cook:
- Heat a nonstick skillet or cast iron pan over medium heat. Cook each tortilla for 1–2 minutes per side until golden spots appear and it slightly puffs.
Step 6
- Keep warm:
- Stack finished tortillas and wrap in a clean towel to keep warm and soft.
