Gluten-Free Mixed Berry Cobbler
Directions
Step 1
Preheat & Prep
- Preheat oven to 350°F (175°C). Lightly grease a 9-inch pie dish or baking dish.
Step 2
Make Berry Filling
- In a bowl, gently toss berries with lemon juice, sweetener, arrowroot, and vanilla.
- Pour the mixture into your prepared baking dish.
Step 3
Make Cobbler Topping
- In a separate bowl, mix almond flour, oats, coconut sugar, tapioca flour, baking powder, cinnamon, and salt.
- Cut in the coconut oil (or butter) until crumbly.
- Stir in milk until just combined—dough should be thick and slightly sticky.
Step 4
Assemble
- Drop spoonfuls of dough over the berries, leaving some gaps for the juices to bubble through.
- Top with extra berries or a sprinkle of sugar, if desired.
Step 5
Bake
- Bake for 35–40 minutes until the topping is golden and berries are bubbly.
- Let cool for 10–15 minutes before serving.
Step 6
Serve
- Delicious on its own or with dairy-free vanilla ice cream or coconut whipped cream.
