Bring a large pot of water to a boil. Add gluten-free pasta and cook until al dente (check package).
Add broccoli florets to the pot for the last 3–4 minutes of cooking. Drain and set aside.
Step 2
Make Cream Sauce
In a blender, combine soaked cashews, plant milk, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and pepper. Blend until smooth.
In a saucepan over medium heat, add olive oil and gluten-free flour. Stir to create a roux. Slowly whisk in the blended cashew mixture until thickened, about 3–5 minutes.

Assemble
Preheat oven to 180°C (350°F).
In a large mixing bowl, combine the pasta, broccoli, and creamy sauce.
Transfer to a greased 9×13″ casserole dish (or disposable foil tray as seen in the image).
Sprinkle dairy-free cheese and/or gluten-free breadcrumbs on top.

Cover with foil and bake for 20 minutes.
Uncover and bake for another 15–20 minutes until bubbly and golden on top.
