Directions
Prepare the Filling
- In a large pan, heat olive oil over medium heat.
- Add onions and garlic; sauté until fragrant, ~2 minutes.
- Stir in carrots, celery, and broccoli. Cook for 5–7 minutes until slightly softened.
- Add peas and stir through.
- Sprinkle in gluten-free flour and stir to coat veggies.
- Slowly pour in broth and plant-based milk while stirring to avoid lumps.
- Add thyme, salt, and pepper. Simmer for 5–8 minutes until thickened.
- Remove from heat and pour into a baking dish.
Add the Lattice Crust
- Preheat oven to 400°F (200°C).
- Roll out the puff pastry and cut into strips.
- Lay the strips over the filling in a crisscross (lattice) pattern.
