Directions
Step 1
- Preheat oven to 350°F (175°C). Grease a small baking dish or oven-safe skillet with coconut oil.
Step 2
- Whisk eggs in a mixing bowl. Add coconut milk, sweetener, vanilla, cinnamon, and salt. Whisk until smooth.
Step 3
- Sift in almond flour and coconut flour, whisking to avoid lumps.
Step 4
- Fold in superfoods: hemp hearts, chia seeds, and shredded coconut.
Step 5
- Layer persimmon slices on the bottom of the greased dish. Pour the batter over the top, making sure the fruit is evenly distributed.
Step 6
- Bake for 30–35 minutes, or until the center is just set and edges are golden. Let cool slightly.
Step 7
- Serve warm or at room temperature. Optional: Dust with monk fruit sweetener or garnish with more hemp hearts.
