Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10-12 minutes, or until the cauliflower is tender when pierced with a fork.
Drain the cauliflower and return it to the pot. Add the olive oil (or dairy-free butter), almond milk, garlic powder, salt, and pepper. Mash until smooth and creamy, adjusting the seasoning to taste. Set aside.
