Steak Fajita Plate with Guacamole (Gluten-Free, Soy-Free, Dairy-Free)

Step 1
Marinate the Steak:
In a bowl or zip-top bag, combine olive oil, garlic, lime juice, cumin, chili powder, paprika, salt, and pepper. Add the steak and coat evenly. Let marinate in the fridge for 1 hour (or up to 6 hours for deeper flavor).
Step 2
Prepare the Veggies:
Heat 1 tbsp olive oil in a skillet over medium-high heat. Add bell peppers and onions. Cook for 7–10 minutes, stirring occasionally, until soft and slightly charred. Season with salt and pepper. Set aside.
Step 3
Grill the Steak:
Preheat a grill pan or outdoor grill to high heat. Grill steak for 4–5 minutes per side for medium-rare, or adjust to desired doneness. Let rest 5 minutes, then slice thinly against the grain.
Step 4
Make the Guacamole:
Mash avocados in a bowl. Stir in red onion, cilantro, lime juice, and salt. Adjust seasoning as needed.

Serve:
Plate the steak slices with sautéed fajita veggies and a generous scoop of guacamole.
