Step 1
Activate the yeast:
In a small bowl, combine warm almond milk and maple syrup. Sprinkle yeast on top, stir gently, and let sit for 10 minutes until bubbly.
Step 2
Mix the dough:
In a large bowl, whisk together gluten-free flour, almond flour, cinnamon, nutmeg, and salt. Add yeast mixture, oil, applesauce, and vanilla. Stir until a soft dough forms. Knead lightly until smooth (about 1–2 minutes). Cover and let rise in a warm place for 45–60 minutes
Step 3
Make the apple filling:
In a small bowl, mix the diced apples with cinnamon, sugar, maple syrup, coconut oil, and arrowroot. Set aside.
Step 4
Shape the dough:
On parchment paper, roll or press the dough into a rectangle (about 9″x12″). Spoon the apple mixture down the center third. Use a sharp knife or pizza cutter to cut slits on both sides of the dough (1-inch apart) toward the filling. Fold strips over the center, alternating sides to create a braid.
Step 5
Transfer to a baking sheet with parchment and let rest for 10 minutes while preheating the oven to 350°F (175°C).

Bake for 35–40 minutes or until golden brown and firm. If needed, tent with foil during the last 10 minutes to prevent over-browning.
