Directions
- 1. Prepare the Base:
- In a mixing bowl, combine almond flour, shredded coconut, cacao powder, melted coconut oil, maple syrup, salt, and vanilla. Press the mixture firmly into the bottom of a parchment-lined 8×8″ pan. Place in the freezer to set (about 10 minutes).
- 2. Make the Creamy Filling:
- In another bowl, mix softened coconut butter, coconut oil, maple syrup, vanilla, and coconut milk until smooth and creamy. Add a tiny pinch of turmeric for that classic yellow tint, if you like. Spread over the chilled base layer and return to the freezer for another 10–15 minutes.
- 3. Add the Chocolate Topping:
- Melt chocolate and coconut oil together over a double boiler or in the microwave in short bursts, stirring until smooth. Pour over the firm middle layer and tilt the pan gently to spread evenly.
- 4. Chill & Slice:
- Refrigerate or freeze the whole pan until the chocolate sets. Once firm, slice into bars using a sharp knife (run under warm water for clean cuts).
